Two questions about the gallery

Hi
I’m new to wordpress and the webdesign “world”. This is an awesome theme and I could figure out most of the stuff by myself.
Still, there are two questions, probably easy ones, I would love to have answered:

1. When I set up a blog page with the “gallery” template like this one ( http://blueowlcreative.com/wp/aqua/a-gallery-post-with-cool-images/ ) I manage that it looks like that. But I would like to post some more images to the post (between the text) and those images should not be visible in the gallery. I don’t know how to to that. Every picture i include in the text is also visible in the gallery…i found a workaround when I add the pictures with img-tags, but I guess that’s not the proper way.

2. There are some infos below the gallery (date, author, comments, category). How can I edit or delete that?
