I’ve used boc_nav_button in my menu to outline the BOOK NOW link.

The button currently shows theme colour on roll-over when showing on a transparent header which is perfect, but then when the page becomes a solid white background the roll-over colour changes to dark grey.

How can I change the style to make sure the roll-over remains theme-coloured on all backgrounds?

The Button hovers inherit the hover colors of your menu.
In the transparent menu you have the theme color, in the scrolled sticky header you have dark color for the hover state, that’s why the button on hover is dark as well.
You can change that option – Main Navigation Hover Text Color in Theme Options, or customize this further with CSS if you want… :)
