Mega Menu Headline Colors

Trying to set up a different color for the mega menu headlines by setting up a class

.menu_green {
color: #79b530;
}

The class works on mouseover only. Any chance to get help? Thanks!

Not sure where you added this, if you let me see your URL I could help further.
Other than that you can target the Headings on top of the megamenus like so in your Child theme:

#menu > ul > li.megamenu div.container.mega_menu_holder > ul > li > a {
color: #79b530;
}
