I have just recently applied this theme to our site and its really clean and great.
But I have wanted to use this Molongui Authorship plugin, but an issue occurs where when the guest authors aspect of the plugin is activated and I make a guest author the author of a post, the post simply displays “by “, and not the guest author. This plugin does work if I was to use a wordpress user. If you would be able to help in any way that would be great, thanks!

Not familiar with the plugin but I will surely try to help!
We use the core “get_the_author_meta” function to retrieve the author data for posts throughout the theme. I found this post that explains how the plugin implements its own methods for retrieving author/post related data:

This guest authors you are using, the get_the_author_meta won’t be able to retrieve your guest users. I think at this point instead of us guessing how things work in the plugin we can ask the authors (You can ask them in their forum or contact page):
