When I hover over the portfolio item and see the “+”, when I click it I want the image to zoom instead of going to the individual page. Is this possible?

Yes, you need to rework your portfolio_carousel shortcode method, to open a pretty photo image instead of the link to the actual portfolio item. Find the method in the includes/shortcodes.php. Also on your portfolio page you could do the same in the
portfolio-three-column.php. Same for the portfolio category template – taxonomy-portfolio_category.php
