and I want to display one portfolio category per page how do I do this rather than the default all & filters which usually comes up

Lets say page 1 = Peugeot Cars

Page 2 = Fiats

Any help Appreciated

Do you mean you need to have different pages for each category?
If yes then you alreay have such, for example:
