For some reason, the homepage is only showing two portfolio items, and pushes the 3rd item to the next page of the carousel.

Any suggestions to make it look like the demo – 3 up.

Please check your portfolio items, you seem to have one without a featured image or smth is wrong with it.
Quick heads up:
1. I would reduce my top-margin of the .big_heading on your front page. You could add this to the editor (TEXT not visual):

<style>.big_heading { margin-top: 0px; } </style>

2. Again in TEXT editor check your code, you have an unclosed LI element:
