When I put in this quote the entire profile text disappears. I assume this has something to do with the quotation marks since the shortcode has the entire text in quotation marks. Is there a way around this?

Use them the other way around – wrap the shortcode attribute in single quotes, then use the doubles for your quote text. Make sure you get rid of the single quotes if you go this way though or you will have another conflict… (I see you have some bachelor’s degree for example).

Inside of them you can’t have the same type of quote.
