I’ve also tried adding the Classic Editor plugin, which did not work. Is there any way to get the theme to work with the latest version of WordPress?

Which theme version are you running?
If using v 1.4 you should still see the Toolbar Toggle that enables your shortcodes in the Gutenberg editor:
