You could do so in this file:
\fortuna\includes\meta_boxes.php

Find these lines:
'label' => 'Show Page Heading',

and

'label' => 'Page Content Top Margin',

then a few lines below each you have this:

'std' => 'on',

change those to:

'std' => 'off',
