I’m running the child theme but I want to update to the latest version of Fortuna. I’m not sure how to upload the latest version. I have the theme plus the child uploaded. Do I deactivate the child? Do I upload “Installable WordPress file only”. I don’t think that zip file has the child theme.
I would attach a screenshot of my themes but I don’t see I’m able to do so here.

You can simply overwrite the parent theme files (via FTP)!
Keeping the Child theme active should be fine too doing this.

No way this wouldn’t work, you don’t get to overwrite the zip, but the actual files, send me your FTP credentials and I will do it for (use a private reply).
