In the bottom of that demo page, “Fortuna is simply Awesome” row with image (man using laptop), the image does not show on iPhone, iPad, etc.

I’ve played with checking/un-checking the boxes under Responsive for the right or left column cell – only one column shows (text or image) but not both. By default, the background image does not show.

Sure, you can easily fix that, simply set a top and bottom padding to that column to 100px for example. Then the column will appear in mobile as well. The reason it doesn’t now is because the equal height cols doesn’t apply for stacked columns and that column being empty simply has its height run as 0. :)
