I saved, updated, refreshed multiple times. I see other options change, but not that. I want the same image size for all the posts on the blog page like the demo and blog options suggest.

They get cropped if they are big enough to be cropped, in your case the image you upload seem to be rather small… Try uploading larger size images! :)
