I see post grids and sliders but can’t figure out how to just do a simple styled listing (see example below). I could write a custom post query in PHP but I have no way to insert into a Visual Composer page.

I would create my own shortcode for this.
Basically follow the logic for once of the existing shortcodes but in your output setup the markup and obviously style it according to your needs. :)
