However I do not understand how to put my own content into the grid (it currently has default content in there). I tried following this post:

But I don’t have the post template section appearing despite having the Custom Post Template plugin installed.

You need to set your Portfolio items’ featured images, those are the ones that show in the grid.
How come you don’t have the custom templates picker if you have the plugin installed?
Maybe you are using a child theme? If yes – check this out:

A featured image is set in the right sidebar at the bottom when editing a portfolio item.

I have uploaded an image to the ‘Featured Image’ section on the page editor is that what you mean? It didn’t do anything though. I want to change all the images in the Portfolio Grid not just one. Screenshot:

This basically lets you pick the style (template) that will be used for the particular portfolio item.

Now the image that will represent this portfolio item in elements like the portfolio grid – is the Featured image, this is a core WP concept, all posts, pages, custom post types (portfolio in that matter) allow you to set a featured image.

So now I understand that you need to create a new portfolio page for each item and set a featured image/s before doing anything else. I was creating new standard pages rather than new portfolio pages which is why the post template section wasn’t appearing I think.

The last bit I’m stuck on is how to tell the items in my portfolio grid which portfolio page/featured image to look at? And how to edit the copy that is in the portfolio grid items. I expect to find it when I go to my portfolio grid widget in the VC but there are no options there?

The portfolio grid simply lists your portfolio items in a grid. Each image in it represents a single item and that image is set under the Featured image section when editing a single portfolio item. Hope it makes sense now.

No such thing as a “correct portfolio item”. The grid element simply orders them according to what you pick under the “‘Order By’ Clause” in the Query tab!
